Resting Meat & Carryover Cooking

Meat keeps cooking after it leaves the heat — the hot exterior pushes warmth into the center, raising it another 3–10°F in steaks and chops and up to 15°F in large roasts. That's carryover cooking, and it's why you pull meat below your target temperature and rest it before cutting.

What resting actually does
Two things. First, carryover finishes the cook: heat stored in the outer layers keeps traveling inward, so the center peaks minutes after the pan. Bigger mass and hotter cooking method mean more carryover; a sous-vide steak has almost none, a 500°F prime rib has a lot.
Second, juices redistribute. Hot muscle fibers are contracted and their moisture is crowded toward the center; slice immediately and it floods the board. Give it minutes to relax and the same slice keeps its juice. The difference is visible in a side-by-side — one board is dry, one is a puddle.
Resting without going cold
Rest on a warm plate or board, loosely tented with foil — sealed foil steams the crust you worked for. A rested steak is still plenty hot inside after five minutes; a big roast holds serving temperature for half an hour. And a hot pan sauce or melting butter on top erases any surface cooling instantly.

- Doesn't resting make the food cold?
- Not in the times that matter — the interior of a rested steak drops only a few degrees, and large roasts barely move. Warm plates and hot sauces cover the rest.
- Do I rest chicken and fish too?
- Chicken benefits the same way (5–10 minutes). Fish needs only a minute or two — its structure holds less juice under pressure and it cools much faster.
