How Long Leftovers Keep
Updated August 15, 2026
Cooked leftovers keep 3–4 days in the refrigerator — that one rule covers almost everything: cooked meat, casseroles, soups, rice, pasta. Get them refrigerated within 2 hours of cooking, and when day four arrives, the freezer or the trash makes the call.
| Leftover | Keeps | Note |
|---|---|---|
| Cooked meat, poultry, fish | 3–4 days | The standard rule |
| Soups, stews, chili | 3–4 days | Freeze beautifully at day 3 |
| Cooked rice and pasta | 3–4 days | Cool rice fast — see rice safety |
| Pizza | 3–4 days | The box is not an airtight container |
| Salads with dressing / mayo | 1–2 days | Dressed greens die fast |
| Cooked vegetables | 3–4 days | — |
| Opened deli meat | 3–5 days | — |
| Hard-boiled eggs (in shell) | 7 days | The outlier — a week |
The 2-hour rule feeds the 4-day rule
The fridge clock assumes the food got there promptly. Cooked food sitting out between 40°F and 140°F is in the bacterial growth zone — after 2 hours (1 hour if the room is above 90°F), refrigerating it just chills the problem. Divide big pots into shallow containers so they cool through quickly; a gallon of hot chili in one deep container can stay warm in the center for hours. Hot food can go straight into the fridge — the old "let it cool first" advice costs safety to save trivial electricity.
Day four: freeze or fold
The 3–4 day window doesn't mean day-5 food is guaranteed bad — it means the risk curve is bending and listeria (which grows even at fridge temperatures) gets more runway every day. The move is deciding at day 3: eat it tomorrow, or freeze it now while it's still good — most leftovers freeze well for 2–3 months. Label with dates; every fridge archaeologist thinks they'll remember, and none of us do. Reheating rules live in the reheating guide: 165°F, sauces to a boil.
Quick answers
- Are leftovers good after 5 days?
- Officially no — 3–4 days is the window. Freezing on day 3 is how you keep day-7 options open.
- Can I put hot food directly in the fridge?
- Yes — modern fridges handle it. Shallow containers matter more than starting temperature; get the center cold fast.
- How long do leftovers keep in the freezer?
- Safety-wise indefinitely at 0°F; quality-wise 2–3 months for most cooked dishes. Soups and stews freeze best.
