There are three safe ways to defrost meat: in the refrigerator (the gold standard — about a day for most cuts), sealed in a bag under cold water (roughly 30 minutes per pound, water changed every 30 minutes), or in the microwave if you cook it immediately after. The counter is not on the list.

Why the counter is banned
A frozen chicken breast on the counter thaws from the outside in — the surface hits the 40–140°F bacterial growth zone within an hour and stays there all afternoon while the center finishes. Same physics condemns thawing under hot water. Cold-water thawing works because the water keeps the surface below the zone while transferring heat 20× faster than air — a pound of ground beef thaws in half an hour, a whole chicken in 2–3 hours with water changes.

Forgot to thaw? Cold water beats the microwave for anything you care about — even thawing is gentle on texture, while microwave defrost half-cooks edges.
