Know which job the egg was doing

Eggs do three different jobs — binding, lift, and moisture/richness — and each substitute covers a different subset. Flax binds beautifully but adds no lift; aquafaba whips into a genuine foam, which is why it can even make meringue; fruit purées add moisture and slight binding while making the crumb denser. Match the substitute to the bake: a chewy cookie wants a binder, a sponge cake wants lift, a snack cake mostly wants moisture.

Where substitutes hit their limit

One or two eggs in a sturdy batter substitute cleanly. Recipes built ON eggs — custards, pastry cream, chiffon and angel food cakes, anything with six yolks — don't convert with a swap; they need a recipe developed eggless from the start. A useful rule: if eggs are more than a third of the recipe's structure, find a vegan version of the recipe instead of substituting into the original.
