Save dinner first, then the pot
The scorched layer stays on the bottom until stirring distributes it. The instant you smell burning: off the heat, no stirring, and decant the top of the pot into a clean one, leaving the bottom centimeter behind. Taste what you saved — mild smokiness often disappears under a splash of cream, acid, or more stock. If burnt flavor pervades even the rescued portion, it was stirred or steeped too long; no additive un-burns a soup.
The escalation ladder for the pot
