- 3 eggs
- kosher salt
- 1 tablespoon butter
- 1/4 bell pepper — diced
- 3 mushrooms — sliced
- 1 handful spinach
- 1/4 cup cheddar — grated

Beat the 3 eggs with a pinch of kosher salt until completely uniform — no streaks of white.

Heat 1 tablespoon butter in a nonstick skillet over medium heat. Cook the 1/4 bell pepper, 3 mushrooms, and 1 handful spinach for 3 minutes until soft. Scrape onto a plate.

Add the remaining 1/2 tablespoon butter. Pour in the eggs and immediately stir with a silicone spatula while shaking the pan for about 30 seconds, until softly scrambled but still glossy.
