Ingredients

  • 2 pork chops — bone-in, 1.5 inches thick
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon neutral oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic — smashed
  • 4 leaves fresh sage
