Ingredients

  • 4 salmon fillets — 6 oz each, skin on
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic — thinly sliced
  • 1 lemon — juiced
  • 2 tablespoons fresh parsley — chopped

Steps

  1. 1

Pat the 4 salmon fillets dry and season all over with 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Dry skin is what crisps.

  2. 2

Heat the 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Lay the fillets in skin-side down and press gently for a few seconds so the skin stays flat. Sear for 5 minutes without moving them.

  3. 3

Flip the fillets. Add the 4 tablespoons unsalted butter and 4 cloves garlic and cook for 3 minutes, tilting the pan and spooning the foaming butter over the fish the whole time.

  4. 4

Off the heat, add the 1 lemon and 2 tablespoons fresh parsley. Baste once more and serve immediately, spooning the pan sauce over the top.
