Ingredients
- 4 salmon fillets — 6 oz each, skin on
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic — thinly sliced
- 1 lemon — juiced
- 2 tablespoons fresh parsley — chopped

Pat the 4 salmon fillets dry and season all over with 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Dry skin is what crisps.

Heat the 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Lay the fillets in skin-side down and press gently for a few seconds so the skin stays flat. Sear for 5 minutes without moving them.

Flip the fillets. Add the 4 tablespoons unsalted butter and 4 cloves garlic and cook for 3 minutes, tilting the pan and spooning the foaming butter over the fish the whole time.
