- 2 chicken breasts — large
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper

- 2 tablespoons olive oil
- 4 cloves garlic — minced
- 1/2 cup sun-dried tomatoes — chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup parmesan — grated
- 3 cups baby spinach
