Ingredients
- 2 pounds chicken thighs — boneless, skinless
- 2 tablespoons chipotle in adobo — minced
- 2 teaspoons ground cumin
- 3 cloves garlic — minced
- 1 lime
- 1 1/2 teaspoons kosher salt
- 1 1/2 cups long-grain white rice
- 2 1/4 cups chicken broth
- 1/4 cup cilantro — chopped
- 15 ounces black beans — one can, drained
- 1 cup corn
- 1 cup pico de gallo

Toss the 2 pounds chicken thighs with 2 tablespoons chipotle in adobo, 2 teaspoons ground cumin, 3 cloves garlic, the juice of the 1 lime, and 1 1/2 teaspoons kosher salt. Marinate while the rice cooks.
